Grilled Jumbo Oysters with IPA Cream Sauce

Grilled Jumbo Oysters with IPA Cream Sauce

Ingredients

  • 1/2 can of your favorite IPA (6oz). The other half of the beer is for the chef!
  • 1 shallot, finely minced
  • 2 cloves minced garlic (or 1 tsp jarred garlic)
  • 1/2 tsp ground black pepper
  • pinch sea salt
  • 1 tbsp cold butter
  • 2/3 cup heavy whipping cream

Directions

  1. Grill oysters until shells open, take top shells off.

  2. In a pot, reduce beer with shallots, garlic, salt and pepper until almost dry. (About 3/4 reduced.)

  3. Once reduced, add heavy cream and reduce again until sauce is thick, by about half.

  4. Whisk in cold butter at end.

  5. Pour sauce over opened grilled oysters & garnish with fresh chopped chives & a squirt of lemon juice.
